Nestled in the southern part of Bougainville, the village of Buin is home to smallholder farmers who cultivate cacao in the island’s fertile volcanic soils. These farmers are part of local cooperatives that have been steadily improving fermentation and drying practices, supported by community-driven quality initiatives. The result is cacao that reflects both the richness of the land and the care of the people who grow it.
Buin cacao stands out for its vibrant and layered flavour profile. The first notes are bright and lively, with red berries and lime bringing a fresh acidity. As the chocolate melts, soft banana and caramel tones emerge, creating a smooth and rounded mid-palate. The finish lingers with dried fruits, biscuit and gentle spice, offering warmth and depth without heaviness.
Bougainville’s unique combination of climate, soil and fermentation techniques produces beans that have gained increasing recognition among fine chocolate makers worldwide. This bar is a celebration of that terroir, capturing the character of the region in every bite.
