Why I chose Mountains of the Moon Cacao

When I first tasted cacao from the base of the Rwenzori Mountains in Uganda, also called the Mountains of the Moon, I felt an immediate connection. The flavour was striking, but what truly stayed with me was the story behind it.

This region is quite special. The high altitude helps the cacao develop deeper flavours. The volcanic soil is rich in nutrients, and the regular rainfall creates ideal growing conditions. It all comes together to create a cacao that is both bold and balanced.

The farmers there grow their cacao under the shade of native trees, often alongside coffee and vanilla. They work with care and respect for the land, using traditional methods that support biodiversity and protect the environment.

After harvest, the pods are brought to local village centres where the beans are fermented and sun-dried. This is slow work, done with experience and patience, and it brings out the true character of the cacao. The chocolate we make from these beans has a bold cocoa flavour with a whisky-like warmth. You’ll also notice hints of roasted nuts and something a little like biscuit. It’s comforting, rich and layered.

But for me, it’s not just about flavour. The farmers are part of a local cooperative that gives them access to fairer prices, organic certification and training. They are building better futures for their families and their communities, while caring for the land that sustains them.

This chocolate is part of a limited edition release. I chose to work with these beans for a short time to highlight the beauty of this origin and the farmers behind it. Once it’s gone, it may not return for a while, so I hope you’ll take the time to enjoy it while it’s here.
